FRIED Onion Rings

OK I know frying is not the best health wise but these are good and you can get most of the fat off by draining on kitchen roll. Do this twice to make them as grease free as possible and remember - this is not an everyday snack!!!
Ingredients
4 large Spanish onions
1 cup wheat flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 egg
1 cup lowfat buttermilk
peanut oil
Preparation
Cut onions into slices 1/4-inch thick.
Separate slices into rings.
Soak rings in ice water for at least two hours.
Drain them, then dry.
Meanwhile, sift wheat flour with salt and baking soda.
Beat egg and add low fat buttermilk.
Add dry ingredients and beat until blended.
Dip onion rings into batter and fry in deep hot peanut oil until golden brown.
Drain on paper towels.
