Greek Lentil Soup

Delicious, Comforting, Warming, Budget-easy, Soup

Ingredients:


2 cups uncooked lentils
8 cups water or vegetable stock
1/2 onion, chopped
1 small carrot - chopped
1 small potatoe - chopped
1 celery stalk - chopped
2 bay leaves
1 and half to 2 tsps. salt
2 tablesps. oil
2 teasps. vinegar

Directions:

Mix all ingredients, except vinegar, in a soup pot and cook until lentils are very soft - about one hour.

Add vinegar (apple cider) at the last minute and serve.

This is enough for 8 cups of soup.

The vinager gives this an unexpected kick. Mine cooked much quicker than expected. Easy to prepare and fast!!!!

Hi, I had this on a recent visit to Switzerland and thought it was absolutely delicious. Worth serving regularly during the winter as it is simple and easy to make (apparently). I'm going to try it here in Spain, where it actually gets quite cold in the winter and our homes are not well insulated so we do need warming up at the end of the day.
