Mix vegetable curry with tofu

Ingredients :
Cauliflower-------- 1 cup (chopped)
Carrot--------------1 cup (chopped)
Green beans---------1 cup (chopped)
Green peas (frozen)---1/2 cup
Tomato (chop)-------2
Chopped onion-----1
Tofu, firm --------1
Chilli, turmeric, coriander powders-----1 tsp each
Jeera (whole)-------1 tsp
garlic ginger paste ----- 1 tsp
cilantro (chopped)
vegetable oil ----1-2 tbsp
Salt to taste
Squeeze the water out from tofu using paper towel. Bake it till it is golden brown.
Rinse&Sprinkle some water and microwave the veggies for 4 minutes. Keep it aside.
In a fry pan,put 1 tsp oil and fry the jeera till you get a good aroma. Now add the onion and sautee for 2-3 min and then add the ginger garlic paste. Toss in the chopped tomatoes and sautee for 2 min. Now add the cooked vegetables, salt, all the powders , rest of the oil and tofu. Sautee this for about 3 min.
Decorate with cilantro. Taste good with chappatis, parathas and rice.
